Description

Pecan halves coated in a spiced orange sugar syrup cooked to softball stage in the microwave — stirred with cinnamon and nutmeg until the mixture turns cloudy and the nuts are coated in a crisp, fragrant glaze. Drop by spoonful onto waxed paper and separate when cooled. A beautiful holiday treat or year-round snack.

  1. Place sugar and orange juice in a 3-quart microwave-safe casserole dish.
  2. Microwave on HIGH for 7½ to 9½ minutes, stirring several times during cooking, until mixture reaches softball stage.
  3. Remove from microwave and immediately add cinnamon, nutmeg, and pecan halves. Stir until mixture looks cloudy and coats the nuts.
  4. Drop by spoonfuls onto waxed paper. Allow to cool completely.
  5. Separate nuts from any clumps once cooled.

Note

The nuts are done coating when the syrup turns from shiny to matte and starts to look powdery on the nuts. Work quickly — it sets fast.
