Description

A classic holiday candy — coconut, pecans, condensed milk, butter, and confectioner’s sugar mixed with your choice of vanilla, mint, or rum flavoring, rolled into balls, and dipped in melted chocolate and paraffin for a firm, glossy shell. Store in tins. A beloved recipe that gets passed from hand to hand every Christmas season.

Ingredients

Instructions

  1. Mix coconut, pecans, condensed milk, butter, and confectioner’s sugar together until well combined.
  2. Add 1 tsp. of your chosen flavoring (vanilla, mint, or rum) and mix well.
  3. Chill the mixture until firm enough to roll, about 1 hour.
  4. Roll mixture into small balls.
  5. Melt paraffin and chocolate chips together in a double boiler over low heat, stirring until smooth.
  6. Dip each ball into the chocolate-paraffin mixture using a toothpick or dipping fork. Let excess drip off.
  7. Place dipped candies on waxed paper to cool and harden.
  8. Store in tins at room temperature or in the refrigerator.

Note

Paraffin wax gives the chocolate coating a firm, glossy finish that does not melt at room temperature. It is food-safe and available at grocery stores near the canning supplies.
