Description

A bright, nutty Thai marinade — chopped peanuts processed with soy sauce, lemon juice, olive oil, coriander, sugar, red pepper, and garlic into a smooth basting sauce. Thread bite-sized chicken on skewers, coat in the marinade, refrigerate for an hour, then grill on foil, basting several times. A quick, bold weeknight skewer.

  1. Chop peanuts in a food processor. Add remaining ingredients and process until well blended.
  2. Cut chicken into bite-sized pieces. Thread onto skewers.
  3. Coat skewers with the peanut mixture. Refrigerate for at least 1 hour.
  4. Place a sheet of foil on a barbecue grill. Put chicken skewers on the foil and baste several times during cooking.
  5. Cook until chicken is cooked through, about 10–15 minutes. Do not overcook — chicken cooks quickly in bite-sized pieces.

Note
