Description
A silky milk chocolate truffle made by cooking evaporated milk and sugar to a boil, stirring in milk chocolate chips and almond extract, chilling the ganache, then shaping into 1-inch balls and rolling in finely chopped toasted almonds for a crisp, nutty coating. Simple, elegant, and irresistible.

Combine evaporated milk and sugar in a small heavy saucepan. Bring to a full boil over medium-low heat, stirring constantly.

Boil for exactly 3 minutes, stirring constantly.

Add chocolate chips and almond extract. Stir vigorously until chocolate is completely melted and mixture is smooth.

Chill for 30–45 minutes until firm enough to shape.
