Shrimp Fried Rice
Description
A quick, healthy shrimp fried rice — shrimp stir-fried with garlic and ginger in dark sesame oil, set aside while carrots, broccoli, scallions, bell pepper, and peas cook in the same pan, then combined with brown rice, soy sauce, hoisin sauce, and a scrambled egg stirred in at the end. Light, flavorful, and ready in 20 minutes.

Heat 1 tsp. sesame oil in a large nonstick skillet or wok over medium-high heat. Add shrimp, garlic, and ginger. Stir-fry for 3 minutes until shrimp are pink. Transfer to a plate and cover.

Add 2 tsp. oil to the skillet. Stir-fry carrots, broccoli, scallions, bell peppers, and peas for 2 minutes.

Add rice, soy sauce, hoisin sauce, cayenne, and shrimp. Stir-fry for 3 minutes until heated through.

Whisk egg and egg white together. Add to the skillet and cook, stirring, until eggs are just set.

Note
Cook the shrimp first, remove them, and add back at the very end — this prevents them from overcooking while everything else comes together.
