Description

A beautiful two-layer gelatin salad — grape Jello dissolved with boiling water, mixed with crushed pineapple and blueberry pie filling, chilled until set, then topped with a creamy layer of sour cream, cream cheese, sugar, and vanilla, and finished with chopped pecans. A stunning Jello salad that works equally well as a side or a dessert.

Instructions

  1. Mix gelatin and boiling water together until gelatin is fully dissolved.
  2. Add undrained crushed pineapple and blueberry pie filling to the gelatin mixture. Stir to combine.
  3. Pour into a serving dish and refrigerate until firmly set, about 1.5–2 hours.
  4. Beat sour cream, softened cream cheese, sugar, and vanilla together until smooth.
  5. Spread cream cheese mixture evenly over the set gelatin layer.
  6. Sprinkle with chopped pecans.
  7. Refrigerate until ready to serve.

Note

Allow the first gelatin layer to set completely before adding the cream cheese topping — usually 1.5–2 hours. A soft set layer will mix into the topping.
