Description

A classic retro Coca-Cola gelatin salad — dark cherry Jello dissolved in heated cherry and pineapple juice, mixed with Coca-Cola, drained dark cherries, and crushed pineapple until partially set, then finished with chopped pecans and cubed cream cheese and returned to the refrigerator. Served on lettuce leaves with a dollop of mayonnaise or sour cream. A Southern party salad with genuine personality.

Instructions

  1. Drain cherries and pineapple, reserving their juices. Cut cherries in half.
  2. Mix reserved fruit juices together and heat just enough to dissolve the Jello. Stir until fully dissolved.
  3. Add Coca-Colas and drained fruit. Stir to combine.
  4. Refrigerate until partially congealed, about 1–1.5 hours.
  5. Add chopped pecans and cubed cream cheese to the partially set mixture. Return to refrigerator.
  6. Refrigerate until fully set.
  7. Serve on lettuce leaves garnished with a dollop of mayonnaise or sour cream.

Note

The partial-congeal step before adding pecans and cream cheese is important — the cream cheese will melt and disappear if added to warm liquid.
