Cajun Dirty Rice
Description
A deeply flavored Cajun dirty rice built on the holy trinity of onion, celery, and bell pepper sautéed in butter, enriched with a dark roux, stock, and tomato paste, then loaded with crawfish, shrimp, crab, or sausage and seasoned with Cajun spice and Tabasco. Finished with fresh parsley and green onions stirred into cooked long-grain rice. Pure Louisiana comfort.

Sauté onions, celery, and bell pepper in butter over medium heat until onions are translucent.

Stir in roux and cook for 1–2 minutes.

Slowly add stock or water, blending well. Stir in tomato paste until fully blended.

Add crawfish, shrimp, crabmeat, or sausage along with Cajun seasoning and Tabasco. Stir to combine.

Simmer about 25 minutes for seafood, or 35 minutes for sausage.

Remove from heat. Stir in parsley and green onions.

Add cooked rice gradually until the mixture reaches your desired consistency.

Note
Roux can be store-bought or made from equal parts flour and oil cooked over medium heat until dark brown. The darker the roux, the deeper the flavor.
