Beef Tamale Soup
Description
A hearty, boldly seasoned Tex-Mex soup — ground beef sautéed with onion, bell pepper, and green chilies, seasoned with cumin, taco seasoning, and garlic, then simmered with kidney beans, stewed tomatoes, corn, black olives, and beef stock. Topped with tortilla triangles, cheddar, and sour cream. Serves 10 and tastes like tamales in a bowl.

Sauté onions, bell peppers, and green chilies in oil until limp.

Add ground beef and cook until browned and crumbly.

Add garlic powder, cumin, taco seasoning, and seasoned salt. Cook 5 minutes, stirring frequently.

Add kidney beans, stewed tomatoes, corn, black olives, and beef stock.

Bring to a boil, reduce heat, and simmer uncovered for 15 minutes.

Ladle into bowls. Top with tortilla triangles, sour cream, and shredded cheddar.

Note
Break up the stewed tomatoes as you add them — large chunks make the soup harder to eat with a spoon.
