Baked Brie
Description
Warm, melty brie wrapped in flaky puff pastry with a sweet filling of pecans, brown sugar, and dried cranberries — then baked until golden. This is the appetizer that makes people stop mid-conversation. Elegant enough for a holiday table, easy enough for any gathering. Serve with grapes, sliced apples, figs, or dried fruit.

Preheat oven to 425°F. Spray a cookie sheet with cooking spray or brush with oil.

In a bowl, mix pecans, brown sugar, and dried cranberries together.

For a 15 oz. wheel: place one pastry sheet on work surface. Cut brie in half horizontally. Spread pecan mixture evenly on the bottom half, top with remaining brie. Place on pastry and fold up the sides. Place second pastry sheet on top and seal edges.

For 8 oz. wheels: unfold one pastry sheet. Cut brie in half. Place bottom half in center of pastry, spread brie with fork or fingers. Add pecan mixture, top with remaining brie. Bring pastry sides up and over, pinching to seal.

Place on prepared cookie sheet. Brush pastry with melted butter.

Bake 20–25 minutes until golden brown. Remove from oven and allow to cool slightly before slicing.

Serve with grapes, sliced apples, figs, dried apricots, or dried dates.

Note
Allow the brie to cool at least 5 minutes before cutting — the filling will be extremely hot straight from the oven.
