Southwest Chicken Marinade
Description
Adam Moore's simple, bright Southwest chicken marinade — fresh lime juice, olive oil, cumin, salt, pepper, and optional red pepper flakes whisked together. Marinade chicken for 1–4 hours for a clean, citrusy, perfectly spiced result every time.

Whisk all ingredients together in a small bowl until well combined.

Place chicken in a shallow dish or zip-lock bag.

Pour marinade over chicken.

Marinate in the refrigerator for at least 1 hour and no more than 4 hours.

Note
Do not marinate longer than 4 hours — the acid in the lime juice begins to chemically 'cook' the chicken and affects the texture if left too long.
