Papa’s Cole Slaw
Description
Papa's coleslaw — shredded cabbage, carrots, grated bell pepper, and onion dressed with a hot sweet-sour vinaigrette of vegetable oil, white vinegar, water, sugar, salt, and celery seed brought just to a boil and poured over the vegetables. Let stand at least an hour. Tangy, crisp, and deeply refreshing.

In a pot, combine vegetable oil, white vinegar, water, sugar, salt, and celery seed. Heat to just below boiling, stirring until sugar dissolves.

In a large bowl, combine grated bell pepper, shredded onion, shredded cabbage, and grated carrots.

Pour hot vinaigrette over the vegetables. Mix well.

Let stand for at least 1 hour before serving.
