Description

A naturally sweetened holiday candy made from toasted almonds, dried apricots, dates, honey, and warm spices of cinnamon, allspice, and nutmeg — rolled into balls and coated in sugar. No cooking required beyond toasting the almonds. The flavor deepens for days in the refrigerator. A beautiful, elegant candy worthy of the name.

  1. Preheat oven to 400°F. Arrange almonds in a single layer on a baking sheet and toast for 10 minutes. Set aside to cool, then finely chop.
  2. Combine honey, orange zest, cinnamon, allspice, and nutmeg in a medium bowl.
  3. Add chopped almonds, dried apricots, and dates. Mix well.
  4. Pinch off rounded teaspoon-sized pieces of the mixture and roll into balls. (Rinse your hands often — the mixture is very sticky.)
  5. Roll each ball in sugar until well coated.
  6. Refrigerate in single layers between sheets of waxed paper in airtight containers for up to 1 month.

Note

The flavor improves significantly after ripening for several days in the refrigerator. Make them a week ahead of serving for the best result.

Rinsing your hands frequently with cold water prevents sticking and makes rolling much easier.
