Description

A classic fruit buckle — a tender vanilla cake batter poured into a 7-inch pan, covered with fresh blackberries, and topped with a buttery cinnamon crumble that “buckles” into the berries as it bakes. Simple, homey, and best served warm with cream or ice cream.

Instructions

  1. Preheat oven to 375°F. Grease a 7-inch baking pan.
  2. Cream butter and sugar together. Add egg and beat well.
  3. Add flour, baking powder, and salt alternately with milk and vanilla.
  4. Pour batter into prepared pan. Cover batter generously with blackberries.
  5. For topping: cream ¼ cup butter and ½ cup sugar. Stir in flour and cinnamon until crumbly.
  6. Sprinkle crumble topping evenly over the blackberries.
  7. Bake at 375°F for 45 minutes until golden and a toothpick comes out clean.
  8. Cool 10 minutes before serving.
