Mardi Gras Party Cake
Description
A dramatic butterscotch layer cake with a rich amaretto-coconut-pecan filling and a seafoam cream topping — layers assembled and finished with a light brown sugar whipped cream. Instructions

Preheat oven to 350°F. Grease and flour two 9-inch round cake pans.

Melt â…“ cup butterscotch chips in water in a small saucepan. Cool.

In a large bowl, combine remaining butterscotch pieces, cooled mixture, flour, sugar, soda, salt, baking powder, buttermilk, shortening, and eggs. Beat for 3 minutes at medium speed.

Pour batter into prepared pans. Bake 20–25 minutes until a toothpick comes out clean. Cool 10 minutes; remove from pans and cool completely.

Prepare filling while cake cools: combine sugar and cornstarch in a saucepan. Stir in cream, amaretto, butter, egg, and reserved butterscotch. Cook over medium heat until thick. Add coconut and pecans.

For seafoam cream: whip heavy cream with brown sugar and vanilla until stiff peaks form.

Place one cake layer on a serving plate. Spread with half the filling. Add the second layer, spread remaining filling on top. Frost sides and top with seafoam cream.
