Description

Instructions

Preheat oven to 350°F. Grease and flour three 9-inch round cake pans.

Combine cocoa with boiling water. Whisk until smooth. Cool completely.

Whisk together flour, baking soda, salt, and baking powder in a bowl.

In a large bowl, beat butter, sugar, eggs, and vanilla at high speed until fluffy.

Beat in flour mixture in four additions, alternating with cocoa mixture. Begin and end with flour. Do not overbeat.

Pour into prepared pans. Bake 25–30 minutes. Cool 10 minutes, remove from pans, and finish cooling on wire racks.

Whip cream with sugar and vanilla until stiff. Spread between the cake layers.

For frosting: melt chocolate chips with evaporated milk in a saucepan over medium heat. Remove from heat. Whisk in powdered sugar. Set bowl over ice and beat until frosting holds its shape.

Frost the top and sides of the assembled cake. Refrigerate until serving.
