Chicken Fingers “Gluten-Free”
Description
Crispy on the outside and tender on the inside, these Gluten-Free Chicken Fingers are a family-friendly favorite that's easy to make at home. A coating of cornstarch, egg wash, and gluten-free breadcrumbs creates a crunchy golden crust without using traditional flour. Perfect for weeknight dinners, game days, or kid-friendly meals, these chicken fingers pair well with your favorite dipping sauces and sides.

Filet the chicken breast then cut in ¾ inch wide strips.

Heat a frying pan with ¾ inches (no need to be precise) of oil to around 350 degrees. (I like to use cast Iron because it holds heat well)

While oil is heating put bread crumbs in a shallow bowl, beat egg and milk together, put corn starch in a gallon sized plastic bag.

Work with 1/3 of the chicken at a time, start by placing the chicken in the plastic bag with the corn starch. Shake the chicken until well coated. Using tongs remove the chicken one peace at a time from the plastic bag and bathe in egg/milk bath then place in bowl with bread crumbs. Make sure the chicken is covered with the bread crumbs then transfer to a cooling rack where it will wait until the oil is read.

Once the chicken is covered and the oil is ready put the chicken in the oil and cook for about 2 min on both sides. Check the temp on the strips to make sure they are done they need to be at least 165 degrees.
