Yam-Banana Casserole
Description
A festive, tropical sweet potato casserole — cooked sweet potatoes mashed with butter, pecans, coconut, brown sugar, and orange juice until soft and fluffy, layered over mashed bananas in a buttered casserole, topped with the remaining sweet potato mixture, sprinkled with crushed cornflakes and more brown sugar, and baked at 350°F for 20 minutes. Unique, deeply Southern, and surprising in the best way.

Preheat oven to 350°F.

Heat cooked sweet potatoes. Stir in 4 Tbsp. butter, pecans, coconut, and ½ cup brown sugar.

Add enough orange juice to make the mixture soft and fluffy.

Place half the sweet potato mixture in a buttered casserole dish.

Cover with mashed bananas.

Top with remaining sweet potato mixture.

Sprinkle with crushed corn flakes and remaining brown sugar.

Dot with remaining 2 Tbsp. butter.

Bake at 350°F for 20 minutes.
