Description

A festive, tropical sweet potato casserole — cooked sweet potatoes mashed with butter, pecans, coconut, brown sugar, and orange juice until soft and fluffy, layered over mashed bananas in a buttered casserole, topped with the remaining sweet potato mixture, sprinkled with crushed cornflakes and more brown sugar, and baked at 350°F for 20 minutes. Unique, deeply Southern, and surprising in the best way.

Instructions

  1. Preheat oven to 350°F.
  2. Heat cooked sweet potatoes. Stir in 4 Tbsp. butter, pecans, coconut, and ½ cup brown sugar.
  3. Add enough orange juice to make the mixture soft and fluffy.
  4. Place half the sweet potato mixture in a buttered casserole dish.
  5. Cover with mashed bananas.
  6. Top with remaining sweet potato mixture.
  7. Sprinkle with crushed corn flakes and remaining brown sugar.
  8. Dot with remaining 2 Tbsp. butter.
  9. Bake at 350°F for 20 minutes.

Note

 Add the orange juice gradually — you want the sweet potato mixture to be soft and fluffy, not wet or runny.
