Shrimp Creole
Description
A stovetop shrimp Creole built on a dark roux cooked in a cast iron skillet, blended with onions, celery, parsley, and garlic, then simmered with tomato sauce and bold Cajun spices until rich and thick. Fresh shrimp go in at the end and cook quickly in the flavorful sauce. Serve over white rice.

In a heavy skillet or Dutch oven, combine oil and flour and cook over medium heat, stirring constantly, until roux reaches desired darkness.

Stir in onions, celery, parsley, and garlic. Cook until vegetables are soft, about 5 minutes.

Add water, tomato sauce, salt, pepper, and red pepper. Stir to combine. Bring to a simmer.

Cover and cook over medium heat for 15 minutes, stirring occasionally.

Add shrimp, stir well, and cook for 10–11 minutes until shrimp are cooked through.

Let stand 5 minutes. Serve over white rice.

Note
Use a cast iron skillet for the roux — it holds heat evenly and gives you the best color control.
