Red Beans and Rice
Description
Mom's quick and easy red beans and rice — Blue Runner creole red beans simmered with sautéed onion, thin-sliced garlic, crumbled bacon, and diced smoked sausage in a well-seasoned pot for 15 minutes, served over perfectly steamed long-grain rice. The Louisiana Monday tradition made right, in 30 minutes.

Fry bacon in a large frying pan. Set aside and chop when cool.

Sauté diced onion in the bacon fat for 5 minutes. Add garlic and diced sausage. Cook for 6–10 minutes.

Add red beans and one can of water. Season with salt, pepper, basil, and oregano.

Turn to low and simmer for 10–15 minutes.

Meanwhile, bring 3 cups of water to a boil. Add 1½ cups rice and stir. Return to a boil, cover, and turn to the lowest setting for 20 minutes. Turn off and let stand 5 minutes without removing lid.

Serve red beans over rice with crumbled bacon on top.
