In a bowl, beat eggs and evaporated milk together. Add sautéed vegetables, parsley, salt, and cayenne. Stir in remaining cheese.
6 Pour egg mixture over the bacon and cheese in the pie shell.
7 Bake at 375°F for 30–45 minutes until the center is firm.

Note
The quiche is done when the center is just barely set and has only a slight jiggle when nudged. It will continue to firm as it cools — remove it before it looks completely done.
