Description

Kate Lamandre's quiche — a pre-baked pie shell filled with crumbled bacon, shredded cheddar, sautéed onions and celery, parsley, and cayenne, bound with a custard of beaten eggs and evaporated milk, and baked at 375°F for 30–45 minutes until the center is firm. A versatile, crowd-pleasing main that works for breakfast, brunch, or dinner.

Instructions

  1. Preheat oven to 375°F.
  2. Place crumbled bacon in the bottom of the pie shell.
  3. Spread ¾ of the shredded cheddar cheese over the bacon.
  4. Sauté onions and celery in a small amount of butter until softened.
  5. In a bowl, beat eggs and evaporated milk together. Add sautéed vegetables, parsley, salt, and cayenne. Stir in remaining cheese.
  6. Pour egg mixture over the bacon and cheese in the pie shell.
  7. Bake at 375°F for 30–45 minutes until the center is firm.

Note

The quiche is done when the center is just barely set and has only a slight jiggle when nudged. It will continue to firm as it cools — remove it before it looks completely done.
