Description

Jumbo pasta shells stuffed with a creamy spinach, mozzarella, cottage cheese, Parmesan, and nutmeg filling, placed in a baking dish, covered with jarred spaghetti sauce, sealed with foil, and baked at 375°F for 30–40 minutes. An easy, satisfying meatless main dish that looks more impressive than the effort required.

  1. Preheat oven to 375°F.
  2. Squeeze all moisture from thawed spinach.
  3. Mix spinach, mozzarella, cottage cheese, egg white, Parmesan, and nutmeg together until well blended.
  4. Fill each cooked shell with a heaping tablespoon of the spinach mixture.
  5. Place stuffed shells in a 12×8-inch baking dish. Spoon spaghetti sauce over all the shells.
  6. Cover tightly with foil.
  7. Bake at 375°F for 30–40 minutes until thoroughly heated.
