Mint Pattie Ice Cream
Description
A three-layer frozen dessert — a vanilla wafer and butter crust, a chocolate cream layer of butter, powdered sugar, egg yolks, and melted baking chocolate folded with stiff egg whites, and a top layer of vanilla ice cream tinted green and flavored with mint extract, all finished with remaining crumbs. Assembled in layers and frozen solid between each stage.

First Layer — Crumb Base
Second Layer — Chocolate Cream
Third Layer — Mint Ice Cream
Instructions

Place vanilla ice cream in the refrigerator to soften slightly while you prepare the other layers.

Mix vanilla wafer crumbs and melted butter. Place half of this mixture in an 8Ă—12-inch pan. Freeze until firm.

Cream butter, powdered sugar, and egg yolks together. Add melted chocolate and mix well. Fold in stiffly beaten egg whites.

Pour chocolate cream over the frozen crumb layer. Freeze until firm.

Stir softened ice cream with mint flavoring and green food coloring until combined.

Pour mint ice cream over the frozen chocolate layer. Sprinkle remaining crumb mixture over the top.

Freeze until completely solid before serving.

Note
Put the ice cream in the refrigerator at the very start of the recipe. By the time you need it for the third layer, it will be the perfect soft-but-not-melted consistency.
