Lemoncello
Description
A classic Italian lemon liqueur made by steeping lemon rinds in high-proof vodka for seven days, then combining with a simple syrup. Best served ice-cold from the freezer.

1. Wash lemons thoroughly with a vegetable brush and hot water. Pat dry.

2. Using a potato peeler, remove all lemon rinds, avoiding the white pith.

3. Place rind peelings in a large container with the alcohol. Cover and let sit for 7 days.

4. On day 8, strain the peels from the alcohol and discard the peels.

5. In a large saucepan, combine water and sugar. Simmer for 15 minutes to make a simple syrup.

6. Allow simple syrup to cool completely to room temperature.

7. Combine cooled syrup with the infused alcohol. Stir well.

8. Bottle and store in the freezer. Serve ice-cold.
Note
The longer the rinds steep, the more intense the lemon flavor. 10–14 days produces an even bolder result.
