Godfather Meatloaf
Description
Carmen Benton's pinwheel-style meatloaf — ground beef seasoned with Rotel tomatoes and Italian breadcrumbs, flattened and rolled around layers of ham and mozzarella, then cooked entirely in the microwave and finished under a blanket of Ragu sauce. A unique, fast technique for a meatloaf with a built-in surprise inside every slice.

Combine the eggs, Rotel tomatoes, breadcrumbs, garlic, salt, and pepper with the ground meat. Mix well.

On waxed paper, flatten two-thirds of the meat into a rectangle.

Arrange the ham slices on top of the meat, leaving an inch margin around the edges.

Place 3 slices of mozzarella over the ham slices.

Place the remaining one-third of the ground meat in a layer over the cheese.

Carefully roll up the meat, using the wax paper to help lift it. Seal the edges and ends well.

Place the roll, seam side down, in a dish suitable for the microwave.

Cook in the microwave on high for 7 minutes, then turn it a half turn.

Cook 6 minutes longer.

Cut the remaining slice of cheese on the diagonal and garnish the top of the loaf with it.

Pour the Ragu sauce over everything.

Drape wax paper over the dish to prevent splatters and microwave just long enough to melt the cheese and heat the sauce.

Note
Use wax paper to help you lift and roll the meat — this prevents tearing and keeps the pinwheel shape intact when you transfer it to the cooking dish.
