Waffles (gluten-free)
Description
Crispy on the outside, tender on the inside — these gluten-free waffles are made with white chocolate, plain yogurt, and very ripe banana for a depth of flavor and moisture that most GF waffles never achieve. Built on the ATK Gluten-Free Flour Blend and simple enough to throw together on a weekend morning. Leftovers freeze beautifully and go straight from the freezer to the toaster.

Whisk together flour, sugar, salt, and baking soda in a medium bowl.

Melt butter and white chocolate then mix with yogurt, milk, and eggs. Add dry ingredients and mix until no lumps (I use stand mixer). Add bananas.

Make waffles according to waffle iron manufactures instructions.

Important: do not leave out bananas or waffles will be dry.
Freezing

Leftover waffles can be frozen for two weeks or longer (I have never had a waffle last longer than two weeks). Just put it through the toaster twice to thaw and heat.
