Crockpot Turkey and Dressing
Description
A complete turkey dinner in the slow cooker — stuffing cubes combined with hot water, butter, onion, mushrooms, and dried cranberries form a moist dressing in the bottom, topped with a seasoned boneless turkey breast and surrounded with carrot chunks, cooked on LOW for 7–8 hours. All the Thanksgiving flavor with almost none of the effort.

Coat a 3½-quart (or larger) slow cooker with nonstick cooking spray.

Combine stuffing cubes, hot water, butter, onion, mushrooms, and cranberries in the cooker. Mix well.

Sprinkle turkey breast with basil, salt, and pepper.

Place turkey on top of the stuffing mixture. Place carrots around the turkey.

Cover and cook on LOW for 7–8 hours.

Remove turkey to a cutting board and slice.

Stir stuffing until mixed and let stand 5 minutes. Serve with sliced turkey and carrots.

Note
Coat the slow cooker with nonstick spray before adding the stuffing — this makes cleanup much easier and helps the dressing develop a slight crust on the bottom.
The stuffing will be moist and soft, not crispy. For a crispier top, transfer to a baking dish and broil for a few minutes before serving.
