Corn Casserole
Description
A simple, cheesy corn casserole — white shoepeg corn, chopped green chilies, cream cheese, cheddar, and a dash of Tabasco baked until the cheese is melted and bubbly. Works as a vegetable side dish or as a warm dip with corn chips. Quick, crowd-pleasing, and equally good from the oven or the microwave.

Preheat oven to 350°F.

Heat cream cheese briefly in the microwave or on the stovetop to soften.

Mix corn, green chilies, softened cream cheese, and Tabasco together until well combined.

Transfer to a casserole dish. Top with shredded cheddar cheese.

Bake at 350°F until cheese is melted and the corn mixture is hot and bubbly, about 20–25 minutes.

Serve as a vegetable side dish or with corn chips as a dip.

Note
Can be cooked in the microwave, but oven-baked gives a better result with a slight golden top on the cheese.
