Description

A layered casserole of whole green chilies, sautéed onion, sharp cheddar, and sliced tomato — blanketed under a savory egg, milk, and flour custard with diced green chilies. All the flavor of chile rellenos without the frying.

Ingredients

Instructions

  1. Preheat oven to 350°F. Butter a 9×13 casserole dish.
  2. Arrange whole green chilies in a single layer on the bottom.
  3. Sauté diced onion in a small amount of butter. Spread over the chilies.
  4. Layer shredded cheddar cheese over the onions, then top with sliced tomato.
  5. Whisk together beaten eggs, milk, flour, diced green chilies, and salt until smooth.
  6. Pour egg mixture evenly over the layered ingredients.
  7. Bake at 350°F for 30–40 minutes until set and lightly golden on top.
  8. Let stand 5 minutes before cutting and serving.
