Baked Rice Casserole
Description
A simple, deeply savory baked rice casserole — raw washed rice sautéed with diced onion in margarine, then combined with beef bouillon, consommé soup, water, mushrooms, and a bay leaf and baked covered at 350°F for one hour. Rich, savory, and far more flavorful than plain rice with almost no extra effort.

Preheat oven to 350°F.

Sauté onion in margarine until softened.

Crumble bouillon cube into the onion mixture and stir well.

Add consommé, water, washed rice, mushrooms, bay leaf, parsley, salt, pepper, and Worcestershire sauce. Stir well.

Transfer to a covered baking dish or cover tightly with foil.

Bake covered at 350°F for 1 hour.

Remove bay leaf before serving.

Note
