Description

A nostalgic, easy chicken curry built on cream of chicken soup — chicken sautéed with onion, then simmered in a yogurt-milk-curry powder sauce enriched with canned soup, served over rice with a build-your-own toppings bar of apple, nuts, coconut, banana, and chutney. Comfort food with a curry twist.

Ingredients

Instructions

  1. Chop the chicken meat into bite-sized pieces.
  2. Sauté the onion in olive oil until translucent.
  3. Add the yogurt, milk, and curry powder, stirring until well blended.
  4. Add the can of cream of chicken soup and stir well.
  5. Add the chopped chicken.
  6. Cook over medium heat until the sauce is bubbly, adding more milk if the sauce becomes too thick.
  7. Lower the heat and simmer until the chicken is cooked through.
  8. Serve over rice, topped with a teaspoon of any combination of chopped apple, chopped nuts, flaked coconut, chopped banana, and chutney.

Note

Set up the toppings in small bowls so everyone can build their own bowl — the contrast of cool fruit and crunchy nuts against the warm curry is what makes this dish special.
