Meatloaf (Microwave)
Description
A rolled meatloaf stuffed with layers of ham and mozzarella — seasoned ground beef flattened on waxed paper, layered with ham slices and cheese, then rolled up and sealed before being cooked quickly in the microwave and finished with Ragu Italian sauce and melted cheese on top. Bold, satisfying, and done in under 15 minutes.

Combine eggs, Rotel tomatoes, bread crumbs, garlic, salt, and pepper with the ground beef. Mix well.

On a sheet of waxed paper, flatten â…“ of the meat mixture into a rectangle.

Arrange ham slices over the meat, leaving a 1-inch margin around all edges.

Place 3 slices of mozzarella over the ham slices.

Place a row of the remaining ground meat over the cheese.

Carefully roll up the meatloaf using the wax paper to lift. Seal the edges and ends well.

Place roll seam-side down in a microwave-safe dish. Cook on HIGH for 7 minutes, then give it a ½ turn.

Cook on HIGH for 6 more minutes.

Cut the remaining mozzarella slices on the diagonal. Place on top of the meatloaf. Pour Ragu sauce over all. Drape waxed paper loosely over the top.

Microwave just long enough to melt the cheese and heat the sauce. Let rest 5 minutes before slicing.

Note
Keep the waxed paper margins at 1 inch — overfilling the edges makes the roll difficult to seal and the filling will escape.
