Description

A silky, warming sweet potato soup — onion and bell pepper sautéed in butter with flour, simmered with chicken broth, mashed sweet potatoes, milk, thyme, parsley, nutmeg, and salt until thick and smooth. Simple, comforting, and ready in 30 minutes.

  1. Melt butter in a saucepan over medium heat. Add onion and bell pepper. Cook, stirring, for 3–4 minutes until soft.
  2. Add flour and whisk to blend.
  3. Add chicken broth, mashed sweet potatoes, milk, thyme, parsley, nutmeg, and salt.
  4. Cook, stirring constantly, until soup thickens.
  5. Remove from heat and serve warm.
