Description

A classic spinach salad — fresh spinach leaves layered with sliced water chestnuts, bean sprouts, hard-boiled eggs, crispy bacon, and onion rings, dressed with a tangy sweet-sour vinaigrette of salad oil, dark vinegar, catsup, and sugar. Bold, satisfying, and better than any restaurant version.

Ingredients

Instructions

  1. Combine spinach, water chestnuts, bean sprouts, sliced eggs, crumbled bacon, and onion rings in a large bowl.
  2. In a jar or container with a lid, combine salad oil, dark vinegar, catsup, sugar, and salt. Shake well.
  3. Pour dressing over salad just before serving and toss to coat.

Note

Dress the salad just before serving — the vinaigrette wilts the spinach quickly if left to sit.
