Crockpot Ropa Vieja with Cuban Style Rice

A Cuban classic made effortless in the slow cooker — chuck roast stuffed with garlic and braised all day with peppers, onion, diced tomatoes, tomato sauce, capers, cumin, and oregano until it shreds into rich, savory strips. Add onions and peppers to the bottom of the slow cooker.

Place chuck roast on top. Cut 4 deep slices into the roast and push garlic cloves into the cuts.

Pour tomato sauce and diced tomatoes over the roast. Add capers, cumin, thyme, oregano, bay leaf, salt, and pepper.

Cook on LOW for 8–10 hours until the beef shreds easily with a fork.

Remove bay leaf. Shred the beef directly in the slow cooker and mix with the sauce.
Cuban Cauliflower Rice

Cook diced bacon in a large skillet over medium heat until crispy.

Add cauliflower to the bacon fat and cook, stirring, for 5–7 minutes until softened.

Add tomato sauce, cumin, garlic powder, onion powder, salt, and pepper. Stir to combine and cook 2–3 more minutes.

Serve ropa vieja over cauliflower rice.
