Description

The South's own peanut butter — sharp cheddar, cream cheese, mayonnaise, diced pimentos, a pinch of cayenne, and onion powder stirred together into a spreadable cheese that belongs on crackers, white bread, celery sticks, or a spoon. Make it the day before — it gets better overnight.

  1. Shred sharp cheddar cheese.
  2. Beat softened cream cheese until smooth.
  3. Add mayonnaise and mix until combined.
  4. Stir in shredded cheddar, drained pimentos, cayenne, and onion powder.
  5. Season with salt and pepper.
  6. Refrigerate for at least 1 hour. Overnight is better.
  7. Serve with crackers, celery sticks, white bread, or use as a burger topping.
