Description

A rustic, olive oil–dressed baked casserole of French-cut green beans and chopped artichoke hearts mixed with Italian breadcrumbs, Parmesan, garlic, egg, and a generous pour of olive oil — baked at 350°F for 30 minutes. A more interesting take on the classic green bean casserole that works beautifully as a holiday side.

  1. Preheat oven to 350°F.
  2. Drain and rinse green beans and artichokes well. Chop artichokes.
  3. Combine all ingredients — green beans, artichokes, breadcrumbs, olive oil, garlic, egg, and Parmesan — in a large bowl. Mix well.
  4. Pour into a greased baking dish.
  5. Top with a little extra breadcrumbs or Parmesan cheese.
  6. Bake at 350°F for 30 minutes.
