Description

The most dramatic cookie in the book. Stiff meringue loaded with chocolate chips, chopped pecans, and vanilla is dropped onto a buttered sheet, placed into a 350°F oven, and then the oven is turned off immediately. The cookies sit in the residual heat overnight — do not open the oven, do not peek — and emerge the next morning as crisp, airy, chocolate-studded meringue clouds.

  1. Preheat oven to 350°F.
  2. Beat egg whites, adding sugar and vanilla gradually, until stiff peaks form.
  3. Gently stir in chocolate chips and chopped pecans.
  4. Drop by spoonfuls onto a lightly buttered cookie sheet.
  5. Place cookies into the oven. Immediately turn the oven OFF.
  6. Leave cookies in the oven overnight. DO NOT OPEN THE DOOR.
  7. Remove the next morning. Cookies will be crisp and airy.

Note

Do NOT open the oven door after placing the cookies inside. Do not peek. The residual heat does all the work and a drop in temperature will ruin the meringue texture.
