Description

A quick, microwave-friendly shrimp Creole built on a dark microwave roux, sautéed onions and celery, tomato sauce, and bold spices — finished with fresh shrimp and served over rice. All the rich flavor of a traditional shrimp Creole in a fraction of the time, made entirely in the microwave.

Instructions

  1. In a 4-quart casserole dish, combine oil and flour. Stir well to mix. Microwave on HIGH for 6 to 6½ minutes until roux reaches desired darkness, stirring at 2 minutes remaining and again at 1 minute remaining.
  2. Stir in onions, celery, parsley, and garlic. Microwave on HIGH for 3–4 minutes until onions are soft.
  3. In a 5-quart casserole, combine the roux mixture, water, tomato sauce, salt, and peppers. Cover and microwave on HIGH for 10 minutes.
  4. Add shrimp and mix well. Cover and microwave on HIGH for 10–11 minutes until shrimp are cooked through.
  5. Let stand covered for 5 minutes before serving. Serve over rice.

Watch the roux carefully in the microwave — it can go from perfect to burned in seconds. Stir at the intervals noted.
