Description

Whole artichokes packed leaf by leaf with a savory mixture of Italian breadcrumbs, garlic, celery, parsley, and Parmesan, drizzled generously with olive oil and finished with a slice of lemon on top. Steamed until the leaves pull free easily.

Instructions

  1. Cut off the tops of the artichokes. Snip off the prickly tips of the leaves. Cut off the root end.
  2. Pound the top of each artichoke on the table to open up the leaves.
  3. Soak artichokes in salted water for a few minutes, then rinse well.
  4. Mix bread crumbs, garlic, celery, parsley, salt, pepper, and Parmesan together.
  5. Pour about 1 pint of olive oil over the mixture and combine well.
  6. Spoon the bread mixture between and into the leaves of each artichoke.
  7. Place a round lemon slice on top of each artichoke. Sprinkle with lemon juice.
  8. Steam in a large covered pot for 1 hour or more until leaves pull out easily.

Note

Do not rush the steaming. Artichokes are done when a leaf pulls free with gentle pressure.
