Rocco DiSpirito's fast, healthy weeknight soup — chicken broth and tomato basil pasta sauce simmered with white beans and crushed red pepper, gently poached chicken breast, finished with wilted baby spinach and fresh basil. Topped with grated Parmesan. Ready start to finish in well under 30 minutes.

Instructions

  1. In a Dutch oven, bring the chicken broth, pasta sauce, white beans, and crushed red pepper to a simmer.
  2. Turn the heat to low.
  3. Season the sliced chicken breasts with salt and pepper, then add to the broth.
  4. Gently poach the chicken, stirring occasionally, for about 2 minutes. The broth should barely simmer.
  5. Stir in the baby spinach.
  6. Continue cooking until the spinach is wilted and the chicken is just cooked through, about 2 more minutes.
  7. Stir in the fresh basil. Season with salt and pepper to taste.
  8. Ladle the soup into bowls and top with grated Parmesan cheese.

Note

Keep the broth at a barely-there simmer while poaching the chicken — boiling it hard will make the chicken tough and stringy.
