Description

A simple, two-stage baked chicken — floured chicken pieces baked skin-side down until set, then doused in a sharp lemon-garlic-Tabasco sauce and baked again until tender and golden. The sauce can also be doubled and poured over roasted diced potatoes for a complete one-pan meal.

  1. Preheat oven to 400°F.
  2. Pour ÂĽ cup oil into a 9x13x2 inch baking dish.
  3. Flour and salt the chicken pieces, then place skin-side down in a single layer in the dish.
  4. Bake for 30 minutes.
  5. While the chicken bakes, combine the remaining ÂĽ cup oil with the garlic, lemon juice, onion, black pepper, thyme, and Tabasco sauce to make the sauce.
  6. Turn the chicken pieces over and pour the sauce over them.
  7. Bake another 30 minutes, until the chicken is golden and cooked through.

Note

This sauce doubles beautifully over roasted diced potatoes — just cut the lemon juice to ¼ cup and increase the oil to ½ cup, and season the potatoes with salt and pepper before roasting alongside.
