Description

A whimsical layered dessert designed to look like a beach scene — a 'water' layer of Berry Blue Jello, a 'sand' layer of graham cracker crumbs, a creamy pineapple-pecan-Cool Whip middle layer, and a top decorated with gummy dolphins, fruit roll-up beach towels, E.L. Fudge cookie sunbathers, and cocktail umbrellas. A showstopping, conversation-starting dessert perfect for a summer party or a kid's birthday.

Instructions

  1. Prepare both boxes of Jello according to manufacturer's directions. Refrigerate until firmly set.
  2. Mix graham cracker crumbs, sugar, and melted margarine together in a small bowl. Set aside, reserving one-third of the mixture.
  3. In a large bowl, mix Cool Whip, drained crushed pineapple, lemon juice, condensed milk, and chopped pecans.
  4. Once the Jello has set, stir it and spread it in the bottom third of a 9x13 pan to represent 'water.'
  5. Line the remaining two-thirds of the pan with the graham cracker mixture (not the reserved portion) to represent 'sand.'
  6. Pour the Cool Whip mixture on top of the graham cracker layer.
  7. Sprinkle the reserved graham cracker mixture on top of the Cool Whip layer to resemble sandy beach texture.
  8. Cut fruit roll-ups into small rectangles to resemble beach towels and place on top.
  9. Place E.L. Fudge cookies on top of the 'towels' to resemble sunbathers.
  10. Add cocktail umbrellas for shade and arrange gummy dolphins and life savers in the 'water' section.
  11. Refrigerate until ready to serve.

Note

Reserve one-third of the graham cracker mixture before lining the pan — you'll need it to sprinkle on top as the final layer of 'sand.'
