Description

Tim Mesler's lentil spaghetti sauce — onion and garlic sautéed in oil, combined with lentils, dried red pepper, and beef broth, simmered covered for 30 minutes, then finished with canned tomatoes, tomato paste, vinegar, basil, and oregano and cooked uncovered for an hour. A hearty, protein-rich meat-free sauce that works beautifully over pasta.

  1. Sauté onion and garlic in oil for 5 minutes.
  2. Add lentils, crumbled red pepper, black pepper, and beef broth. Cover and simmer for 30 minutes.
  3. Add canned tomatoes, tomato paste, vinegar, basil, and oregano.
  4. Simmer uncovered for about 1 hour, stirring occasionally, until sauce is thick and flavorful.
  5. Serve over pasta.
