Description

Paul Prudhomme's pasta salad — rotini tossed in olive oil with browned onions, butter, and Veal and Pork Magic seasoning, cooled, then combined with Cardini's Zesty Garlic dressing, artichoke hearts, diced tomatoes, sliced white grapes, and Parmesan. A bold, layered pasta salad with unexpected ingredients that works beautifully.

  1. Cook pasta according to package directions, drain, and cool completely.
  2. Heat olive oil in a skillet over high heat. Add onions and cook, stirring, until they start to brown.
  3. Add butter and garlic. Cook 1 minute more.
  4. Blend in Veal and Pork Magic seasoning. Add cooled pasta. Turn off heat and stir until combined. Cool completely.
  5. In a large bowl, combine garlic dressing, artichoke hearts, tomatoes, and grapes.
  6. Add cooled pasta mixture and toss well.
  7. Add Parmesan cheese and toss again. Refrigerate until ready to serve.

Note

The pasta needs to be completely cool before combining with the dressing — warm pasta will absorb it all and leave the salad dry.
