Coq au Vin
Description
Dad's coq au vin — chicken pieces dredged in flour and browned in butter and olive oil, combined with diced ham, onions, carrots, mushrooms, garlic, herbs, and white wine, then covered and braised in the oven at 325°F for one hour. A classic French-inspired braise that fills the house with an incredible smell.

Preheat oven to 325°F.

Coat chicken pieces in flour. Season with salt and pepper.

Heat butter and olive oil together in a Dutch oven over medium heat. Brown chicken pieces on all sides. Remove and set aside.

Add diced ham, yellow onion, green onions, carrots, mushrooms, and garlic to the pot. Sauté for 5–6 minutes.

Add white wine and return chicken to the pot. Add bay leaf, parsley, and thyme. Season with salt and pepper.

Cover the Dutch oven and braise in the oven at 325°F for 1 hour.

Remove bay leaf before serving.

Note
Do not let the butter get too hot when browning — burnt butter will make the whole dish bitter. Medium heat is correct.
