Chicken Salad
Description
A classic Southern chicken salad made with poached and cooled chicken breast, diced celery, sweet relish, and mayonnaise — seasoned simply with salt and pepper. Serve on croissants, lettuce leaves, or crackers. Doubles easily for a crowd and keeps well refrigerated for 3 days.

Poach chicken breasts in lightly salted water over medium heat for 18–20 minutes until cooked through.

Remove chicken and let cool completely. Shred or dice into bite-sized pieces.

Combine chicken, diced celery, sweet relish, and mayonnaise. Mix well.

Season with salt and pepper to taste.

Refrigerate for at least 1 hour before serving.

Note
Poach the chicken in lightly salted water with a bay leaf and a few peppercorns for the most flavorful result. Shred while still warm — it shreds more easily than cold chicken.
