Description

A classic Louisiana Cajun fritter made from boiled, mashed mirliton (chayote squash) mixed with egg, baking powder, melted butter, and flour, then fried by the spoonful in hot oil until golden brown. Simple, unique to South Louisiana, and utterly satisfying served hot.

Instructions

  1. Boil mirliton until tender, about 20–25 minutes. Drain very well and mash.
  2. Mix mashed mirliton, egg, baking powder, melted butter, flour, salt, and pepper together until combined.
  3. Heat about 1 inch of cooking oil in a skillet over medium heat.
  4. Drop batter by tablespoonfuls into the hot oil.
  5. Fry until golden brown on each side, turning once.
  6. Drain on paper towels. Serve hot.

Note

 Mirliton is a pale green pear-shaped squash known as chayote outside of Louisiana. It is available at most grocery stores, particularly in Southern and Latin markets.
