Pecan Pie
Description
A classic Southern pecan pie — toasted chopped pecans stirred into a warm filling of eggs, sugar, corn syrup, butter, vanilla, and salt, poured into a warm pie crust and baked until set. Let stand at least 1.5 hours before slicing so the filling firms up completely.

Preheat oven to 375°F. Toast pecans lightly in a dry skillet or oven for 5–7 minutes until fragrant. Set aside.

Combine eggs, sugar, corn syrup, butter, vanilla, and salt in a saucepan over low heat. Stir until butter melts and ingredients are combined. Do not boil.

Mix in toasted pecans.

Warm the pie crust gently in the oven until warm to the touch (about 3 minutes). Pour filling into warm crust.

Bake at 375°F for 35–40 minutes until the filling is set with only a slight jiggle in the center.

Let stand for at least 1.5 hours before slicing.

Note
Let the pie stand for at least 1.5 hours after baking before slicing — the filling is too loose to cut cleanly until it has fully set.
Light corn syrup produces a milder, more delicate flavor; dark corn syrup gives a richer, more molasses-like result.
